The food here is based in the classics but includes complex techniques that can take years to master — so the celebrities need to quickly hit the Michelin standard. Extra pressure is piled on by the illustrious guest list of diners: six gastronomic trailblazers including Aktar Islam (Opheem), Anna Haugh (Myrtle) and Frederick Forster (190 Queen's Gate).
